8 small or medium zucchinis
1/2 cup uncooked rice
1/2 lb ground beef
1 Tbsp tomato paste or 1 can tomato sauce
3-4 cloves garlic
1-2 Tbsp dried mint
Juice of 1 Lemon
Salt and Pepper
1-Core the zucchinis till none of the seeds are left then wash them clean.
2-Combine the rice, the meat, crushed garlic, salt and pepper. Squeeze the tomato juice on them and combine.
3-Stuff the zucchini with the mixture 3/4 of the way, leaving a little space for the rice the cook.
4-Set them in the pot standing as upright as possible and cover them with water/tomato sauce. I used 1 can of tomato sauce and the rest was water to cover the zucchinis.
5-Season with salt and pepper if needed.
6-Cook for about 30 minutes.
7-Crush the garlic, incorporate the dried mint and the lemon. When the zucchini are done add the lemon, garlic and mint combo. Boil for 5 minutes.
8-Serve with some sauce and plain yogurt.
