Every Man Dies. Not Every Man Really Lives.
This week has been so amazingly uneventful and i'm grateful to have some normalness (not sure if that's a word but if it's not i'm taking credit for inventing it) in my life. JJ and i have been having more frequent heart to heart talks concerning how we want to go about building our family; even though adding a member to our family of 2 is on top of our list we still want to enjoy our lives. i don't want to look back in a few years and all i can remember from my 30s is misery, heartache and disappointments. we want our house to be filled with happiness and laughter, we want our friends to want to hang out with us cause we are "fun" to hang out with, we don't want people to feel sorry for us cause we don't feel sorry for ourselves, we want our friends/family to share their happy news with us and we want to help them celebrate their blessings.
It starts today.
"Do not dwell on the past, Do not dream of the future, Concentrate the mind on the Present moment" Buddha
JJ and i made a nice Linguine dinner, watched some funny movies/tv shows and kept each other company way past midnight. I love spending quality time with the hubbs.
Recipe - One Pot Lemon Pasta
· 9 oz linguine pasta (store-bought fresh)
· 1/4 extra virgin olive oil
· 1/4 cup white wine
· 1/4 cup fresh lemon juice
· 1/2 cup Parmesan Cheese
· 1 tb lemon zest
· 1/2 cup fresh Italian Parsley, chopped
· 1/2 cup sweet onion, diced
· salt to taste
Boil a large pot of water and prepare pasta according to package directions. Drain pasta and transfer back to pot. Combine all ingredients, tossing to coat pasta evenly. Serve immediately.
